Primo Aperitivo was born in Mexico City from a deep appreciation of life’s simple pleasures and a desire to share Mexican culture with the world.

In 2020, during the pandemic, while we were isolated and things that were taken for granted became unique and special, we knew our next project had to be a reminder of what is most important in life, through our eyes. We then set out to bring a piece of Mexico City’s laid- back luxury and aesthetic to every table, which we share with friends and family.

THE NATURAL APERITIVO OF MEXICO

Primo Aperitivo invites us to consider our foundations, to toast to the past, to the future, and above all to be present in the now. In the moments we share.

Made with citrus, botanicals, and agave nectar sourced from responsible Mexican agriculture.

STEP N° 1

Our raw materials (botanicals, citrus and 96% ABV grain spirit) are sent from our local suppliers to our production facility in the Doctores neighborhood of Mexico City.

STEP N° 2

We remove the white part from our citrus peels (mostly grapefruit) and weight and prepare the rest of the ingredients for maceration. Then, we put everything in a cloth bag.

STEP N° 3

The ingredients are then macerated in a stainless steel vat with the neutral grain spirit previously diluted with water to reach 50% ABV beginning the 7-day process where the active ingredients and essential oils are dissolved by the alcohol.

STEP N° 4

We then filter the maceration to remove sediments. To blend and sweeten it, we mix it with a syrup we make with agave nectar and water to proof down the ABV from 50% to 18%. We finally add natural coloring from sweet potato and cochineal. After 24 hours and a second filtration, the liquid is ready.
